The Caribbean as we know is a hot bed of cuisine and culture. With this melting pot comes a number of unique dishes, often replicated around the world, but not always the same as home. One of these dishes synonymous with Jamaica, is the infamous Jerk – Chicken and Pork.
The origin of the Jerk style of cooking is said to be traced back to the Maroons and maybe even to the indigenous tribes which once inhabited the island. The word Jerk itself originates from the word charqui, a Spanish term and is a smoking technique that traditionally uses pimento wood to deliver the dishes unique flavor.
